Lemon, Rosemary and Garlic Chicken

Here is one proof that simple is best.  There are only 5 ingredients : Chicken, Olive Oill, lemon, rosemary and garlic (and the usual salt and pepper of course).  Just sort of throw them all together and then let the oven do the rest of the work.  What you get is a flavorful chicken at the dinner table without sacrificing your precious  facebook time.  I bet you can throw in some potatoes too to soak up all those flavorful juices.  Just make sure it isn't that oily or your arteries will get clogged. 

Preparation
Cut 1 3-4 lbs chicken into 8 pieces. 
Toss chicken with 1/2 cup extra-virgin olive oil, 1/2 cup fresh rosemary leaves, 1/4 cup lemon juice, 10 cloves of garlic thinly sliced, 1 cup chopped lemon pulp/pith (peel of lemon removed!), salt and pepper in a ceramic bowl.  

Marinate at room temperature for 1 hour.

Heat oven to 475 degrees. Arrange chicken in a baking dish or pan; add remaining marinade.

Roast one side for 15 minutes then flip.
Roast for 20 minutes then flip again.  Just to sear up the other side again roast for another 10minutes. 

This is what it will look like after its done.

Serve with corn, salad, potatoes or any side dish you wish.  And keep the left overs!  Just between you and me, I realized my lunch today tasted better (I cooked this 3 days ago).
